Jim is CEO of ENOUGH, a food ingredient company supplying ABUNDA' mycoprotein. Jim has worked in the food industry for 30 years in roles with Unilever, PepsiCo in the 90's, managing Quorn internationally in the noughties and including roles in strategy, M&A and briefly looking at the human microbiome. Jim co-founded Enough in 2015 and the company has a team of 70, with a first manufacturing facility in the Netherlands and head office functions based in the UK. Enough's goal is to grow 1 million tonnes of product in the next decade, which requires collaboration across all parts of the value chain.
